Order and taste this!        ProsciuttoFrom the distant past Istrian prosciutto has been a famous and widely recognised Istrian hors d'ocuvre.It is tastier if thinly sliced. In all Istrian restaurants prosciutto is served with cheese and olives although it is also used for preparing hot dishes. PastaIn Istria pasta is a characteristic hors d'oeuvre. Pasta is prepared with all kinds of sauces. Ravioli, posutice, fuzi and macaroni are prepared with different meat, vegetables, mushrooms or escargots. TrufflesAlthough you can taste different kinds of mushrooms in Istria, like the well-known and very tasty "martincice" and "lisicice", probably the most famous is the Istrian truffle. A real particularity is that they are seasoned with "pest" chopped bacon, garlic and parsley. In Istrian taverns there is a wide variety of such Istrian stews: manestra with young corn, manestra with fennel, manestra with chick-peas, meatless, white, young... Manestra prepared with sauerkraut is called "jota".
