| Order and taste this! ProsciuttoFrom the distant past Istrian prosciutto has been a famous and widely recognised Istrian hors d'ocuvre.It is tastier if thinly sliced. In all Istrian restaurants prosciutto is served with cheese and olives although it is also used for preparing hot dishes. PastaIn Istria pasta is a characteristic hors d'oeuvre. Pasta is prepared with all kinds of sauces. Ravioli, posutice, fuzi and macaroni are prepared with different meat, vegetables, mushrooms or escargots. TrufflesAlthough you can taste different kinds of mushrooms in Istria, like the well-known and very tasty "martincice" and "lisicice", probably the most famous is the Istrian truffle. There are different ways to use this deucocy, ranging from combinations with fuzi, omelettes, sprinkled on steak, with game, or truffles can even be used for preparing pastries. AsparagusCharacteristics of Istria are also asparagus that grow in the wilds and are gathered in spring. Although asparagus are bitter, they are very tasty when prepared with eggs, as a salad or side dish. They are very healthy and are excellent diuretic agent. Vegetable stews (manestre)Characteristics of Istrian cuisine are the various and rich stews, called manestre They are prepared with meat or vegetables, which makes them very nutritious. A real particularity is that they are seasoned with "pest" chopped bacon, garlic and parsley. In Istrian taverns there is a wide variety of such Istrian stews: manestra with young corn, manestra with fennel, manestra with chick-peas, meatless, white, young... Manestra prepared with sauerkraut is called "jota".  |
